  • Workshop Description
    The FAPC and the Institute of Food Technologists-Oklahoma section will be holding a Research Symposium February 16, 2010 in room 201 of the FAPC.

    The symposium will include oral and poster presentations of research conducted at the FAPC and OSU, a keynote address by Tony Mata, and Cozzini Equpment Demonstration .

        Mata & Associates
      • Antonio Mata is an independent consultant to the meat industry and self-proclaimed Meat Geek. A native of Mexico, Mata studied at the University of Arizona where he earned his Ph.D. in agricultural biochemistry and nutrition in 1979. Prior to establishing his consulting business in 1994, Mata worked for companies such as The Dial Corporation, Armour and Company, International Mulitifoods, Reuben Prepared Foods and others. In 1986, he led the technical team that pioneered the successful shelf-stable microwave category. Over the past several years he has been the technical coordinator of a major new product initiative for the National Cattlemen’s Beef Association: the Beef Value Cuts Program. This check-off funded initiative has resulted in the successful introduction of several new beef cuts. Mata and his team of meat geeks provide consulting services for restaurant chains, retailers, processors and packers in the United States, as well as Central and South America.
