Horticultural Products Processing Specialist
Current research or demonstration projects: Current research and extension efforts focus on finding and promoting processing methods which add economic value to horticultural products produced in the state of Oklahoma. This includes efforts to make novel use of commodities already grown in the state as well as searching for underutilized products suitable for further processing. Specific projects include efforts to increase pecan quality and shelf-life, to evaluate and enhance storage stability of cut watermelons, and to optimize processing methods for jerusalem artichokes.
